Slow-cooked to perfection in your DeliVita pizza oven, this dish offers a tender, juicy feast, beautifully complemented by the fresh, herby zing of homemade chimichurri sauce. It's a celebration of robust flavors that are sure to brighten any winter evening. 🪴🥩
Ingredients:
1kg beef ri-tip - or use a rump
For the rub:
2 tbsp Maldon salt
1 tsp ground black pepper
1 tsp onion powder
1 tsp celery salt
1 tsp garlic powder
For the chimichurri:
4-5 anchovies in oil from a jar
1 small handful of capers, drained
1 clove garlci, peeled
2 tbsp white wine viengar
1 tbsp Dijon mustard
Juice of 1 lemon
Big bunch of parsley, roughly chopped
Big bunch of basil, roughly chopped
100ml olive oil
Freshly ground black pepper
Method:
Mix together the rub ingredients in a small bowl and generously season the beef. You’ll need about 2 tbsp of rub per 1kg of meat as a rule of thumb.
Place the beef on a cast iron tray and slide into the oven (your oven should be medium-hot).
Turn the beef regularly to build up a good crust and then remove from the oven when the internal temp hits 50°C.
Remove the beef from the tray and set aside to rest.
Coarsely chop the chimichurri ingredients and place in a serving bowl.
Slice the beef against the grain and serve along with the chimichurri.

Marinated in a blend of aromatic spices and yogurt, this dish is a delightful dance of flavors and colors. The high heat of your DeliVita pizza oven perfectly mimics a traditional tandoor, ensuring each piece is succulently cooked with a slightly charred exterior. Ingredients:
4 - 6 chicken thights (bone in, skin on)
3 tbsp natural yogurt
2 tsp tandoor spice mix
Pinch of salt and pepper
Juice of half a lime or lemon
A couple of lemon or lime wedges
A little fresh coriander leaf
Method
Mix up a tandoor style marinade by stirring together all of the ingredients except the chicken.
Add the chicken, stir into the marinade and leave in a bowl in the fridge for an hour or two.
Get your Delivita in the 200°C range with a small amount of flame.
Place the chicken and citrus wedges in a cast iron skillet of a suitable size.
And place in the middle of the Delivita pizza oven. Cook for around 20 minutes until the skin is crispy and slightly charred, the chicken should be cooked through, ensure it hits an internal temperature of 74°C.
Serve with white rice, coriander and the charred citrus squeezed over the top.

This Vegan Massaman Curry is a heartwarming blend of spices, coconut milk, and an assortment of vegetables. It's a vegan recipe that doesn't compromise on richness or depth of flavor. Slow-cooked in the DeliVita pizza oven, the ingredients meld together beautifully, creating a harmonious and satisfying meal that's perfect for those chilly Winter evenings. 🥘🥔
Ingredients:
1 tsp fennel seeds
1 tsp cumin seeds
1 tsp coriander seeds
2 tsp cornflour
1 tbsp vegetable oil
1 tbsp tamarind paste
4 tbsp roasted peanuts
2 choppd red chillis
6 cloves
2 bay leaves
1 cinnamon stick
2 lemongrass stalks
8 shallots
4 garlic cloves
1.5" ginger
30g fresh coriander
3 kaffir lime leaves
400ml coconut milk
250ml vegetable stock
You can use a selection of your favourite veggies in this curry - the picture shows potato and butternut squash.
Method:
Toast the fennel, cumin and coriander seeds in a frying pan for a couple of minutes until fragrant. Set aside.
Roughly chop the lemongrass, shallots, garlic and ginger and fry for 3 minutes. Once lightly browned add them to the blender along with toasted seeds, lime leaves and coriander stalks (reserving leaves). Blend until smooth.
Pour back into the pan and fry for a few minutes until golden brown. Then pour in the coconut milk and simmer until reduced by 1/3.
Stir in the vegetable stock - leaving approximately 40ml of the liquid to mix with the cornflour in a separate bowl. Add half of the mixture back to the sauce and simmer for another 5 minutes stirring occasionally. The sauce should be thickened to a Thai curry sauce consistency, if it not, add the rest of the cornflour mixture and keep simmering until thickened to your preference.
Add the tamarind paste, bay leaves and cinnamon stick.
Peel the butternut squash and potatoes, and roughly chop into bit sized pieces. Add any other fresh veg at this point too (we also like green beans, spinach and cauliflower).
Pour the sauce into a cast iron dish. Add the veg, leaving the cauliflower on top so that it roasts in the oven.
Place the dish inside the pre-heated oven. After 7 - 8 minutes, using a heat proof glove turn the dish all the way round.
In around 8 minutes, always using the heat proof glove to handle the dish, remove and stir the veg well and pop back in the oven.
Leave in the oven for around 15 minutes (stirring regularly) or until the veg is cooked to your liking.

Ingredients:
For the biscuit base:
6 - 7 Digestive biscuits
50g unsalted butter, plus extra for greasing
1 tbsp golden caster sugar
For the brownie
300g dark chocolate
200g unsalted butter
1 tsp vanilla extract
60g cocoa powder
60g plain flour
300g golden caster sugar
1 tsp baking powder
3 eggs
Pink and white mini marshmallows to cover
Method:
Start by making the biscuit base. Lightly grease a 20cm skillet/cast iron pan. Bring your DeliVita oven to a medium heat and melt the butter in the pan.
Crush the biscuits in a bowl and mix together with the melted butter and sugar. Add the mixture to the skillet, patting down evenly over the base, and cook for about 8 – 10 minutes.
To make the brownie, break the chocolate up and add to a bowl with the butter and vanilla. Place the bowl over a pan of simmering water and stir until melted.
Mix all the dry ingredients together in a separate bowl, then add to the melted chocolate.
Beat the eggs in another bowl and add to the chocolate mixture, stirring well for a silky consistency.
Pour the mixture over the top of the biscuit base in the skillet and pat down until evenly distributed.
Return the pan to the oven for 20 – 25 minutes – the centre of the brownie should remain a little gooey.
Place the mini marshmallows on top of the brownie and put the skillet back in the oven for about 2 minutes until they are soft and slightly toasted but still holding their shape.

And of course, we can't forget about a classic Margherita Pizza. This simple yet elegant dish highlights the traditional use of your DeliVita pizza oven. With a crispy base, tangy tomato sauce, fresh mozzarella, and a hint of basil, it's a timeless pizza recipe that never fails to please. A true testament to the roots of your versatile clay oven. 🍕🧀
Ingredients:
Salt
All-purpose flour, for dusting
4 DeliVita organic pizza dough (or feel free to make your own)
8 Ounce mozzarella, grated
Handful fresh basil leaves, torn
1 (28-ounce) can pelati tomatoes
Method:
Remove the dough balls from the freezer & lay the frozen dough balls onto a tray, keep them in their separate bags, leave them in refrigeration at 4ºC overnight, the next day remove the dough from their bags carefully, dip them into a bowl full of flour & place them back onto a tray, leave them out at room temperature approx 20º C for a minimum of 1-2 hours before making a pizza. (The dough must be covered at all times with a damp tea towel to prevent them from drying out).
Preheat a DeliVita oven, t's best to heat it for 25 minutes before cooking.
Add tomatoes to a food processor and process until smooth. Season with salt.
Using your fingers to spread and shape your dough into a pizza shape, refrain from using a rolling pin as it will kill the yeast and ruin your pizza!
Using a spoon to spread, put 1/4 of the sauce on the dough, and spread leaving a 1-inch border (for the crust of course!)
Sprinkle 1/4 of the mozzarella over the sauce.
Using a pizza peel (which you can purchase from our website) put the pizza on the floor of the pizza oven. Bake until golden and crisp, about 90 seconds. for extra tasty-ness top with hand torn basil.
